JUNIOR CHEF DE PARTIE - BAKERY (TG 06)

The organisation is calling for suitable candidates to apply for the position of Junior Chef De Partie. 
The Junior Chef De Partie will be required to provide support to the Chef De Partie in coordinating menus, preparation of food as well as serving food to Durban ICC guests. 
The incumbent will report to the Chef De Partie. 
 
QUALIFICATIONS, EXPERIENCE & COMPETENCIES 
Minimum Qualifications 
 Diploma in Professional Cooking, or relevant NQF level 5 qualification 
 One (1) year experience as a Chef

KEY PERFORMANCE / MAIN ACTIVITIES OF THIS ROLE 
 Prepare bakery items according to the standardized culinary recipes at all times; 
 Need to be able to work from scratch recipes, understanding of starter dough’s, sour dough’s, soda breads proving and baking methods of bread; 
 Knowledge overall bakery experience, rolling out dough, cutting, shaping ,platting dough, roll making and loaf baking, bread making of classical breads, glazing ,dipping and basic piping techniques. 
 Mixing dough’s, batter dough, whipping, lamination of dough’s and creaming dough methods; 
 Ensure ordering of stock is done timeously and readily available for functions at all times; 
 Ensure that monthly stock takes are conducted timeously and efficiently; 
 All bakery items must be prepared in accordance with standardised culinary recipes at all times; 
 Escalate all queries and issues relating to bakery, menus and suppliers to the Chef De Partie; 
 Receive and capture requisitions on a weekly basis to prepare for the upcoming events on the JDE system; 
 Ensure all bakery items are prepared as per standard recipe cards whilst maintaining portion control and minimizing waste. 
 Ensure that kitchen equipment is inspected and maintained in line with Durban ICC standards and ISO requirements. 
 Ensure that the kitchen is inspected in line with the Durban ICC standards and ISO requirements. 
 Practice good personal hygiene, apply HACCP and ISO 22000 cleaning processes within the kitchens 
 Train, mentor and supervise Trainee/Student Chefs.

COST & ASSET ACCOUNTANT (TG13) 
MIN: R546 968.03 – MAX R917 042.75 PER ANNUM (TOTAL COST TO COMPANY) (INTERNAL & EXTERNAL) 
The organisation is calling for suitable candidates to apply for the position of Cost & Asset Accountant. 
The Cost & Asset Accountant is responsible for recording the cost of newly acquired fixed assets and stock (both tangible and intangible), tracking existing fixed assets, recording depreciation, and accounting for the disposition of fixed assets within Durban ICC. 
The incumbent will report to the Finance Manager or nominated representative.

KEY PERFORMANCE / MAIN ACTIVITIES OF THIS ROLE 
 The incumbent will be required to provide assistance with the preparation of AFS for the entity; 
 Write off assets that are earmarked for disposal timeously; 
 Ensure that all assets are verified for completeness and existence; 
 Prepare monthly VAT returns together with accurate reconciliations; 
 Ensure that the complete fixed asset verification is undertaken on a bi- annual basis; 
 Monitor internal capital asset spend against budget and generate reports on a monthly basis; 
 Develop internal controls, systems and processes in terms of fixed assets and cost management; 
 Prepare balance sheet reconciliations to ensure that costs and fixed assets are reconciled timeously; 
 Responsible for ensuring that the assets of the entity are disposed in accordance with the SCM policy; 
 Inventory management i.e. stock maintenance, stock control , management and reporting; 
 Implement internal controls and assist management to implement cost containment initiatives; 
 Ensure that all fixed assets additions meet GRAP 17 criteria for capitalization and are timeously added to the fixed asset register; 
 Ensure that missing assets are approved for write –offs in accordance with company policy and processes; 
 Responsible for management of subordinates and providing guidance to the team.

KEY PERFORMANCE / MAIN ACTIVITIES OF THIS ROLE 
 Oversee and reconcile all events invoiced accurately and completed on the system; 
 Manage the administration ensuring all invoiced events have been supported by complete, valid and accurate supporting documentation; 
 Conduct verification to ensure a complete and accurate reconciliation of all events invoiced on the system; 
 Provide input in the preparation of financial statements; 
 Revenue collection compliance monitoring in line with policies and procedures. 
 Monitor and manage debtors collections; 
 Circulate the debt age analysis schedule to senior management on a monthly basis;
 Monitor revenue streams i.e POS, Parking and tenant revenue is completely and accurately recorded at each month; 
 Ensure compliance with accounting standards and regulations; 
 Analyse and interpret financial data and prepare revenue budget projections during annual mid –term review process; 
 Perform variance analysis to monitor financial performance; 
 Undertake accurate monthly reconciliations of all bank and cash accounts, which includes the cash book.

HOUSEKEEPING SUPERVISOR (TG07)

The organisation is calling for suitable candidates to apply for the position of the Housekeeping Supervisor. The Housekeeping Supervisor will be required to provide professional, direct hands on supervision that ensures the performance of the cleaning staff on a daily basis. 
 
QUALIFICATIONS, EXPERIENCE & COMPETENCIES 
Minimum Qualifications: 
 National Senior Certificate (Grade 12) is essential 
 Computer Literacy in Microsoft Office 
 A minimum of 2 years’ proven experience and track record in cleaning services within the hospitality industry, particularly large conference and convention facilities. 
 
Knowledge
 Excellent knowledge of ordering, replenishing and monitoring stocks of cleaning equipment materials. 
 Good knowledge of cleaning products, applications and general hygiene practices. 
 Knowledgeable on industrial cleaning equipment, products and chemicals as well as the use/ application thereof. 
 Good knowledge of waste recycling.

KEY PERFORMANCE / MAIN ACTIVITIES OF THIS ROLE 
 Assign duties to all Cleaners and inspect their work conformance with the prescribed standards of cleanliness (ISO international standards). 
 Ensure that all assigned areas to Cleaners are cleaned within the Durban ICC, inclusive of the Convention Centre, Arena and Exhibition Centre. 
 Ensure that all venues that are assigned to Cleaners are cleaned during events both before, during and after the event takes place. 
 Ensure adherence to recycling procedures. 
 Ensure adherence to ISO rules and regulations specific to cleaning and the use of chemicals. 
 Investigate complaints regarding cleaning and equipment and take corrective action as and when required. 
 Verify quotes from external service providers to ensure that inventory stock is adequate. 
 Ensure that all cleaning equipment and products are cleaned and stored neatly in designated cupboards according to Durban ICC standards. 
 Ensure that the daily attendance register, check sheets and stock inventory are completed by all Cleaners. 
 Ensure good grooming and personal hygiene practices for all cleaning staff in line with Durban ICC standards. 
 Provide day-to-day personnel management of cleaning staff. 
 Conduct induction, orientation and in-service training to explain policies, work procedures, and to demonstrate the use and maintenance of cleaning equipment.
 Liaise with outsourced Cleaning Company Supervisors to ensure consistency in cleaning. 
 Timeous prioritisation and assignment of work objectives. 
 Leave scheduling accurately managed. 
 Training needs accurately and timeously identified.
