Position Status: Permanent
Location: Pretoria
Reporting Line: Manager Facilities Management
Overall Job Purpose: To provide an efficient and cost effective food service to the Canteen and during events within the CGS.
KEY RESPONSIBILITIES:
- Plan and prepare menus for the canteen and other events as required.
- Ensure that all menus are constantly updated, paying special attention to seasonal availability
- Ensure that all menus are calculated correctly to ensure maximum returns and ensure viability of the canteen services.
- Develop standard recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food costs; exercises portion control for all items served and assists in establishing menu selling prices.
- Schedule and coordinate the work of assistant food service staff to assure that food preparation is economical and technically correct and within approved margins.
- Requisition of stock/products and other necessary food supplies in line with the CGS policies and procedures
- To ensure that all stocks are being kept securely and under the correct conditions applicable to each type of commodity stored
- Cook or directly supervise the cooking of planned and agreed menu.
- Prepare necessary data for applicable parts of the budget; project annual food, and other costs and monitors actual financial results; takes corrective action as necessary to help ensure that financial goals are met.
- To ensure that all documents are sent to the appropriate accounts department immediately for processing.
- Establish controls to minimize food and supply waste and theft
- Conduct regular stock checks/stock takes
- Ensure that high standards of sanitation, cleanliness and safety are maintained throughout the canteen areas at all times.
- Ensure that correct protective personal equipment is in place and used at all times
- Ensure compliance with the Occupational Health and Safety Act, and regulations relating to the canteen operations.
QUALIFICATIONS AND EXPERIENCE:
- Diploma in Food Preparation and Cooking (Culinary Arts)
- 2 - 3 years relevant experience as a chef/ in food preparation and cooking
SKILLS REQUIRED:
- Excellent customer care
- Verbal and written communication skills
- Ability to work well under pressure.
