Senior Lecturer

  • PhD or equivalent NQF level 10 qualification in the Built Environment, with an undergraduate qualification in urban planning or related town and regional planning.
  • At least 5 years of lecturing experience.
  • Evidence of research.
  • Evidence of postgraduate supervision.

Summary of duties

  • The incumbent will be expected to contribute to teaching and learning activities, including curriculum development, consultation with students, and academic administration, and engage with research, community outreach, and external engagement in line with the DUT policies.
  • Teaching, assessing, and supervision at all levels. Responsible for at least two modules per semester in accordance with fair workload distribution, and undertake lecturing, assessment, and supervision of students in theoretical modules. To assist the department in the delivery of quality teaching and learning.
  • Be actively involved in research and/or post-graduate supervision in the department at all levels.
  • Assist with administrative and other duties as prescribed by the Head of Department or representative as delegated.
  • Facilitating departmental community engagement projects.

MINIMUM REQUIREMENTS:       

Lecturer   

  • A relevant Master’s Degree in Ecotourism /Tourism management.
  • At least 3 years of university teaching experience.
  • Ability to lecture Ecotourism/ Tourism Marketing, Sustainable Tourism Development and Planning, Tourism Management and related fields.
  • Teaching and record of research publications in accredited journals would be a strong recommendation

DEPARTMENT OF HOSPITALITY AND TOURISM MANAGEMENT: HOTEL SCHOOL (RITSON CAMPUS)

RESTAURANT MANAGER (REF:1655)

 

Job purpose

 The Restaurant Manager plays a pivotal role in the overall success of the Hotel School Restaurant by developing and implementing strategies to maximize restaurant profitability while maintaining the highest standards of service. Under the direction of the Director: Hospitality and Tourism Department, the incumbent will: 

  • Manage the Restaurant and Conference Centre through effective supervision of staff whilst ensuring that restaurant equipment is utilized and maintained appropriately.
  • Keep strict control over budget.
  • Manage the Academic and Skill Training of the students as per Quality Assurance Criteria
  • Responsible for the training of students in the Restaurant and Conference Centre 

 

Minimum Requirements 

  • A three-year Diploma (NQF level 6) in Hospitality Management/Food and Beverage/Food Service Management or any Hospitality related qualification.
  • A minimum of five (5) years’ experience in a Food and Beverage environment is required, of which three (3) years should have been as a Food and Beverage/Restaurant Manager.
  • Proven ability to run multiple outlets or functions simultaneously.
  • In-depth knowledge of premium food and beverage trends, and wine pairings
  • High attention to detail, creativity, and a hands-on, guest-centric approach
  • Knowledge of restaurant management software/s, like Micros or similar systems 

 

Recommended:

  • Experience in A la Carte service.
  • Good understanding of fine dining service.
  • Good understanding of mentoring and training of students.
  • Solid understanding of food and beverage operations, including inventory control, budgeting, cost control and revenue tracking

Key Performance Areas/Principal Accountabilities: 

  1. Management of restaurant and conference operations:
  • In consultation with the restaurant staff, draw up plans for the restaurant operations for approval by the Director.
  • Align strategic objectives of the Hotel school with restaurant training and operations.
  • Manage the implementation of operational plans and ensure that they are achieved.
  • Ensure that the restaurant operations meet the commercial and training needs of the Hotel School through maintaining consistent high standards of food and beverage service, food safety, health and hygiene 
  1. Promoting and marketing of restaurant business:
  • Take responsibility for restaurant marketing plan and implementation thereof.
  • Draw-up plans for the restaurant and conference promotions and approval by the Director.
  • Conduct market research to stay updated on industry trends, competitor analysis, and client preferences 
  1. Budget and cost control
  • Collate information to serve as input in drawing up the budget for the restaurant and conference centre.
  • Draw up the budget for the restaurant operations for presentation to the Director.
  • Manage the budget according to set principles of budget control in conjunction with the Director.
  • Advise the Director on any budget variance 
  1. Training of students
  • Provide instructions to the students and to guide and support, observe and evaluate students’ performance in the training restaurant
  • Train students the necessary technical and operational tasks in the training restaurant
  • Liaise with academics to ensure synergy between restaurant simulation and theory classes
  • Monitor student progress
  1. Administration and supervision of staff
  • Supervise the acquisition of stock and ensure that appropriate controls of stock are put in place and maintained
  • Ensure that staff members are trained in checking deliveries and manning stores to make sure that the supply of food for restaurant operations is not interrupted.
  • Liaise with the suppliers to source good quality food supply from the market.
  • Keep contact with the industry professionals to keep abreast of the developments in restaurant operations and to facilitate the placement of students for in-house experiential learning.
  • Appraise staff performance and provide feedback to improve productivity

Minimum requirements:

  • B Degree in Accounting, or any other relevant qualification (NQF Level 7).
  • Registration with a reputable accounting body.
  • 3 - 5 years Payroll experience, preferably in a higher education sector.
  • Knowledge of relevant legislation and rules such as UIF, Tax , Skills Levies, PAYE, WCA.
  • Understanding of IFRS and other relevant accounting standards.
  • Understanding of payroll-related practices such as payroll reconciliations.
  • Understanding of Financial systems.
  • Advanced Proficiency in MS Office.
  • Proficient in SAP or equivalent system.
  • Demonstrated ability to reconcile payroll and post-payroll postings.


Summary of Duties:

  • Perform payroll data variances analysis.
  • Query and validate bottom line variances with Human Resources.
  • Process payroll payments on the systems once accuracy of data have been confirmed by Human Resources.
  • Investigate and correct payroll rejections.
  • Transfer payroll file to bank for payment within agreed timeframe.
  • Preparation, reconciliation and submission of all monthly and annual statutory returns such as PAYE, UIF and SDL (EMP 501) returns.
  • Prepare and submit all returns and declarations for the department of labour.
  • Reconcile the annual EMP201 to generate the EMP501 and submit to SARS.
  • Generate IRP5s for submission to SARS and distribution to employees.
  • Calculate any PAYE overpayment and submit any refund claims to SARS.
  • Process all statutory and third-party payments accurately and timeously prior to submission to Manager Accounts Payable and Payroll for review and approval.
  • Perform statutory and third-party payment reconciliations.
  • Submit proof of statutory deduction payments to HR
  • Make available reports, answer to audit queries from and render explanations to the DUT auditors during interim and year end audits.
  • Prepare all the payroll disclosure for the annual financial statements in line with the reporting standards and DHET requirements.
  • Prepare reports for purposes of reporting to various structures as required, in accordance with the reporting schedule.
  • Provide input into monthly reports on payroll-related metrics Ensure payroll system updates take place as scheduled.
  • Submit forecasted increase in employee benefits and statutory contributions to Manager Accounts Payable and Payroll for inclusion in the payroll budget.

Minimum Requirements:

  • B-Tech or Advanced Diploma in Fleet Management, Transport Management, or Logistics (NQF 7)
  • Minimum 6 years of relevant experience in student or passenger bus transport operations.
  • Minimum 6 years of fleet management experience.
  • Minimum 6 years of management experience in logistics or operational services, including service provider management, contract administration, and budget control.

 

Key responsibilities:

  • Oversee and coordinate end-to-end logistics and student transport service delivery across all DUT campuses, ensuring safe, reliable, and cost-effective service delivery within the student transport and logistics mandates throughout the academic calendar.
  • Plan, manage, and regularly review DUT student and staff bus services across campuses and residences, including route design, timetables, and schedules aligned with academic calendars, residence demand, enrolment patterns, and operational constraints. Apply detailed knowledge of campus layouts and surrounding areas to optimise routing efficiency, minimise travel times, and ensure adequate coverage of pick-up and drop-off points.
  • Develop and implement operational delivery plans for each service area, selecting appropriate delivery mechanisms, contracting models, and resource configurations to meet institutional requirements efficiently and sustainably.
  • Manage operational budgets across all service units by monitoring monthly expenditure against approved allocations, analysing variances, and implementing corrective actions where required.
  • Oversee service provider and operator relationships, ensuring defined accountability and full compliance with SLA conditions, relevant legislation, and DUT policies.
  • Ensure all service provider appointments and renewals are conducted strictly in compliance with DUT procurement policies, supply chain procedures, and applicable legislation.
  • Identify, appoint, and manage service providers across relevant student transport and logistics service areas, including contracted transport operators and logistics vendors.
  • Develop, negotiate, and maintain comprehensive Service Level Agreements (SLAs) that define clear performance standards, service delivery expectations, reporting requirements, and penalty provisions, and conduct regular performance reviews with formal evaluations at contract renewal.
  • Monitor and enforce adherence to contracted SLAs on an ongoing basis; document non-conformance, issue formal notices, and escalate persistent underperformance through the appropriate governance channels.
  • Manage and control the operational budget for student transport and logistics services; monitor expenditure against approved allocations, identify variances, and implement corrective measures to ensure financial sustainability.
  • Conduct structured monthly service review meetings with key internal and external stakeholders to assess transport and logistics service performance, review complaints, identify recurring issues, and agree on corrective and improvement actions.
  • Maintain a formal complaints and compliments register for all transport and logistics services; monitor resolution turnaround times, analyse trends and patterns in service failures, and use insights to drive continuous service improvement, with regular reporting to management.
  • Ensure that all transport and logistics operations are delivered within defined and communicated turnaround times; monitor adherence, address systemic causes of delays, and proactively escalate capacity or resourcing constraints.
  • Develop and maintain a standardised reporting framework for all operations and services functions, covering operational throughput, SLA adherence, budget performance, vendor compliance, and incident statistics.
  • Compile and submit regular management reports to the Director on operational performance, contract compliance, financial position, and any deviations from approved service standards, together with proposed corrective actions.
  • Provide the Director with timely updates on the status of all contracts, including renewal timelines, performance trends, financial exposure, and any compliance or legal risks associated with contracted operators.
  • Maintain accurate operational records, including route logs, trip sheets, incident reports, operator correspondence, and contract documentation, ensuring all records are always audit-ready.
  • Respond to ad hoc requests for transport data from senior management, finance, internal audit, or student affairs, supplying accurate information and supporting documentation within agreed timeframes.

EXECUTIVE CHEF: (REF: 1654) 

 

Job Purpose

Under the direction of the Director of the Hotel School, the Executive Chef plays a pivotal role in the hotel school by training students in a simulated kitchen environment whilst ensuring that the food served to restaurant patrons is of high quality. The incumbent is also responsible for the overall quality of food of the Hotel School Restaurant by developing innovative and creative menus that meet the needs of restaurant patrons.


Job Knowledge, Skills and Experience

  • A three-year Diploma (NQF level 6) in Professional Cookery/Culinary Arts/Hospitality or any equivalent hospitality-related qualification
  • A minimum of five (5) years industry-related experience as a Chef in a high-volume environment is required, of which three (3) years should have been as Head Chef
  • Ability to balance volume service (buffets, platters) with refined à la carte finesse.
  • Hands-on experience with various kitchen equipment (e.g. grillers and pasta makers)
  • Advanced knowledge of culinary techniques, baking and pastry techniques and recipes
  • Familiarity with sanitation regulations
  • Experience in A la Carte service an added advantage.

 

Recommended:

  • Expertise in designing and preparing A la Carte menus
  • Familiarity with halal gourmet
  • At least 1-2 years’ experience in a fine dining establishment.
  • Good understanding of mentoring and training of students.
  • Strong leadership and motivating skills.

 

Key Performance Areas/Principal Accountabilities

  • Menu Planning & Development – Plan and execute varied menus—from interactive buffets to fine-dining à la carte, ensuring variety, innovation, and cost control.
  • Food Preparation & Quality Control – Maintain consistency, taste, and presentation of dishes.
  • Kitchen Management – Supervise the planning, preparation, and presentation of all meals, including breakfast, lunch, dinner, outdoor meals, and special events and conferencing.
  • Inventory & Cost Control – Monitor food costs, inventory levels, and kitchen expenses to ensure efficient operations and budget compliance.
  • Student Training & Development – Train, mentor, and supervise students whilst enforcing student discipline on an on-going basis, and staff discipline in the kitchen.
  • Compliance & Safety – Ensure health, safety, and HACCP hygiene practices are followed.
  • Supplier & Inventory Management – Source ingredients, negotiate with vendors, and maintain stock levels.
  • Budgeting- Assist the Director of the Hotel School to prepare restaurant budgets.
  • Student Assessment - Planning and execution of practical assessments where applicable.
  • Special Events- Drive creativity for themed experiences including Food and Wine Tasting events.
