Duties: ACCOUNTABILITY
The Sculler is accountable to the Executive Chef - Bluewater Bay Sunrise Hotel; a division of the Coega Development Corporation (CDC). The Sculler is responsible for the cleanliness of the kitchen and all food preparation areas.
 
MANDATE
The Sculler is mandated by the Board of Directors of Coega Development Corporation to take responsibility for the cleanliness of the kitchen and all food preparation areas under the direction of the Executive Chef and ultimately the General Manager • Bluewater Bay Sunrise Hotel.
 
RESPONSIBILITIES AND OBLIGATIONS
Reporting to the Executive Chef, this position's primary responsibility is to assist in keeping the kitchen clean. 
 
In pursuance of this primary objective, Sculler is required to: -
Wash all dishes, pots, pans and cutlery during preparation, service and after service
Pack away all clean dishes, pots, pans and cutlery
Maintains the cleanliness and sanitization of the kitchen areas, utensils and equipment
Keep all food preparation areas clean and correctly sanitized
Sweep, wash and scrubs floors
Assist with mise-en-place where necessary
Sorts and removes refuse 
Stores refuse in designated areas
Wash and sanitizers refuse bins 
Transfer supplies or equipment between storage and work areas.
Any other general tasks as requested by Management

REQUIREMENTS
Ability to work shifts including night work and working on weekends and public holidays
Previous experience in 4 or 5* Hotel advantageous
 
PERFORMANCE INDICATORS
Performance is monitored regularly by reference to Key Performance Indicators and Balanced Scorecard.
