JUNIOR CHEF DE PARTIE (TG 06) MIN: R 13 648.36 MAX R15 736.49 PER MONTH FOUR (4) MONTHS FIXED TERM CONTRACT (INTERNAL & EXTERNAL) The organisation is calling for suitable candidates to apply for the position of Junior Chef De Partie. The Junior Chef De Partie will be required to provide support to the Chef De Partie in coordinating menus, preparation of food as well as serving food to Durban ICC guests. Escalate all queries and issues relating to dishes, menus and suppliers to the Chef De Partie. Demonstrate knowledge of the Northen, Southern, Western, Eastern and Central Indian curries. Receive and capture requisitions on a weekly basis to prepare for the upcoming events on the JDE system. Ensure all food items are prepared as per standard recipe cards whilst maintaining portion control and minimizing waste. Ensure that kitchen equipment is inspected and maintained in line with Durban ICC standards and ISO requirements. Ensure that the kitchen is inspected in line with the Durban ICC standards and ISO requirements. Practice good personal hygiene, apply HACCP and ISO 22000 cleaning processes within the kitchens. Ensure that operational requirements pertaining to events are processed timeously on the EBMS system. Ensure that Durban ICC events are coordinated in a professional manner according to the Durban ICC standard. Verify costs to be included on client invoices for the provision of any additional services and or recovery against damages from the client. Ensure that the event file that is handed over to the Events Project Manager is accurate before sending the same to Finance Department for invoicing. Ensure that Durban ICC clients and suppliers are informed on Durban ICC policies and procedures, health and safety regulations, ISO standards, centre capacity and capabilities. Maintain Durban ICC’s financial viability status by upselling services and or venues to the clients and prepare documentation to be approved by the client.
