OPERATIONS EXECUTIVE (TG 17) MIN R 863 152.00– MAX R1 432 411.00 PER ANNUM (INTERNAL & EXTERNAL) The organisation is calling for suitable candidates to apply for the position of the Operations Executive. The Operations Executive will be responsible for planning, leading and directing the operations function within Durban ICC. The incumbent will report to the Chief Operations Officer. QUALIFICATIONS, EXPERIENCE & COMPETENCIES Minimum Qualifications A Bachelor’s Degree in Business Administration/ Business Commerce or any relevant equivalent qualification Minimum of five (05) years’ experience within the banqueting, exhibition and conferencing industry Minimum of seven (07) to ten (10) years’ experience in a Management position. Draft tenders for the department in line with Supply Chain Management policy and procedures. Research, draft and align business best practice models to suit strategic organisational objectives, legislative requirements and industry trends. Develop business plans, indicating key performance areas in accordance with departmental, organisational and legislative objectives. Develop a SWOT analysis to evaluate business requirements that will improve economic viability and service excellence. Monitor and interpret trends that are associated with operations and service delivery with the aim of maintaining and increasing business levels. Control procedures that are related to business requirements such as approving floor plans, erection of structures etc. Manage service providers and service level agreements to ensure that deliverables are carried out efficiently. Ensure that the centre complies with health and safety requirements, by – laws regulations and legislation. Oversee the project management of special events. Research and investigate trends within the hospitality industry and develop strategies to retain existing and prospective clients. Manage the department’s expenditure within the allocated approved budget and provide monthly reports. The SCM & Compliance Manager will be responsible for managing overall supply chain strategy in order to maximize process efficiency and productivity as well as develop and maintain good relationships with vendors in accordance with SCM legislation. Provide report on the status of procurement to Executive Management on a monthly basis. Manage all processes related to the evaluation of bids. Manage the verification and pre- qualification of persons/companies participating in the bidding process. Manage the review process of relevant bid reports for evaluation purposes both internally and at various Municipality Bid Committees. Manage the process of Supplier Performance audits to ensure satisfactory levels of service delivery. Provide monthly and quarterly reports to the Audit Committee. Lead the negotiation of costs with suppliers to get the best prices where required. Ensure that Supplier non-conformances are dealt with timeously. Facilitate the procurement process for all capex related projects from end to end. Mange assets of DICC by disposing of in accordance with the SCM policy. Ensure Management of all contracts via the contracts register to ensure that none of the contracts are on a month to month basis. SOUS CHEF – INDIAN CUISINE (TG 11) READVERTISEMENT MIN R338 431.00– MAX R570 065.00 PER ANNUM INTERNAL AND EXTERNAL The organisation is calling for suitable candidates to apply for the position of Sous Chef- Indian Cuisine. The Sous Chef will be required to perform tasks that are associated with the operational requirements of the Halaal kitchen, which are detailed on the work schedules, oversee the preparation of meals and assist in all aspects of the kitchen. Schedule staff rosters according to the number of functions in the centre. Demonstrate ability to mix and extract the full flavour from spices in an appropriate manner. Design menu planning and place prepared meals in the correct food outlet. Escalate queries and issues relating to dishes, menus and suppliers to the Executive Chef. Place food orders on the ordering system to ensure that the kitchen does not run out of stock. Demonstrate knowledge of the Northern, Sothern, Western, Eastern and Central India curries. Prepare Indian Cuisine meals such as different curries, biryanis according to the Durban ICC standards. Ensure that food temperature records and labelling are maintained according to the ISO specifications. Ensure that food items are prepared according to the standard recipe cards whilst maintaining portion control and minimizing waste. Ensure that the kitchen equipment is inspected and maintained in line with the Durban ICC standards and ISO requirements. • Manage the daily food administration in terms of the required written communication and allocation of duties. Liaise with function coordinators and floor supervisors with regards to the details of functions and events. Responsible for management of subordinates and providing guidance to team.
